Autumn Vege’s: Snow Peas
Welcome to Autumn! The weather is changing, so it’s a great time to give your garden a makeover to complement the cooler weather. There are so many plants to try in autumn, from spinach and radishes to garlic and beetroot, your veggie patch will feel refreshed and vibrant with these new additions. As there are so many options, we’ve picked just one of our favourites to focus on; our veggie of the season: snow peas.
- Snow peas aren’t too excited about their roots being disturbed, so it’s best to grow them from seeds straight in the ground. If your veggie patch is frequented by pesky birds or animals, be sure to sufficiently protect your seedlings with mesh, fencing, etc.
- Best time to sow: Feb to August in cool, temperate and frost-free regions.
- Snow peas prefer a sunny position, liking roughly 6 hours of sun a day. Make sure they’re not getting too much though, as they will get a bit hot in direct sunlight all day!
- Ensure the soil is well-draining. Mounding your garden beds will help to ensure the soil will sufficiently drain. A pH level of 6-7 is ideal, the snow peas will grow best in a slightly acidic climate.
- When planting the peas, place seeds 2cm deep and 2 cm apart and expect to see shoots in around 10 days.
- Snow peas are climbing plants, so ensure you provide a climbing frame for them to grow up.
- Harvest when the veggies look mature, just before the pod starts to swell.
- These super versatile veggies can be eaten fresh on their own, in a salad, steamed, stir-fried, etc.
- A great side to any dish is lemon, garlic and butter snow peas with toasted almonds.
- Snow peas
- Shaved almonds (or finely sliced almonds)
- Lemon juice
- Garlic, crushed
- Olive oil
- Start by trimming the ends off the snow peas.
- Heat a non-stick frying pan over medium heat, and toss in the shaved almonds. Toast until they become golden brown. Remove from the pan and let cool.
- Blanch for 30-45 seconds in boiling water, be sure not to leave them in there for too long or they will become soggy and lose their delightful crunch.
- Melt butter and garlic in a pan, and once melted and fragrant, toss in the snow peas.
- Stir fry for 2-3 minutes, and add in the toasted almonds and a nice big squeeze of lemon juice. Cook for a further minute until everything is well combined and fragrant.
- Season with salt and pepper (a hint of chilli flakes if you’re feeling spicy), and serve on the side of your main, or as a delightful snack.
- Great source of dietary fibre, and vitamins B1, C, K.
- Contain potassium, calcium and iron.
